A COMMUNITY TO TAKE PRIDE IN
Eighty Rainbow Women and friends enjoyed perfect weather, our very own ukulele group, the Rainbow Jammers, and a corn-hole game at our annual Pride Picnic in celebration of Gay Pride Month in June.
Sue Lebow, on right in photo with Patty Rhodes, can take pride in seeing so many women enjoying the organization she helped found back in 2011 with Sue Dibble and Jeanne DeJoseph. The two Sues carried the torch for many years and love seeing the active membership grow every year.
OUT-OF-TOWNERS CHECK US OUT
Rainbow women invited several out-of-town guests to the picnic. Ruth Dubin (on left in photo below) and her partner, Susan Eddy, came all the way from Gainesville, Georgia to join their friends Lea Hopkinson and Peg Adams.
All of us think we’re great cooks, and showed off specialties like Pat Olive’s ribs with her secret barbecue sauce, Nancy Schmit’s corn soufflé (see recipe below), and Roe Estes’ strawberry pretzel pie, an old Oklahoma recipe.
1 can cream-style yellow corn
1 can whole-kernel sweet corn, drained
1 teaspoon each, salt and pepper
4 Tablespoons sugar (1/4 cup)
5 Tablespoons softened butter
1 cup flour
2 cups milk
Shredded Parmesan cheese
1. Preheat oven to 350o.
2. Grease a 3-quart casserole with butter.
3. Beat the eggs using a mixer.
4. Add the flour, milk, sugar, two cans of corn, salt & pepper.
5. Sprinkle shredded Parmesan cheese on top.
6. Bake for 45 minutes.
